It's been a while (new recipes soon)

Hey readers - I've been in a less-than-creative cooking/baking mode and also, perhaps, somewhat in survival mode to some degree, as far as eating goes. Things probably won't improve much until the beginning of April, because of a crazy work schedule, but I do have a couple of recipes back-stocked that I hope to get up in the interim.

In the meantime, I thought I would like to ask what your favorite go-to foods are -- this doesn't necessarily mean comfort foods (though it could, I suppose) -- but perhaps more the things that you turn to when the idea of cooking is too overwhelming (or lonely or you just want something that suits the day). My non-comprehensive list includes:

  • Sauteed veggies (cabbage, carrot, ginger, onion)
  • Beans on a crisped tortilla
  • Plain yogurt with blueberries and/or granola
  • Veggie sticks with hummus/nut butter
  • Beans and rice
  • Carrot soups of various sorts

  1. In the spring/summer/fall, I tend to (1) saute whatever happens to be in season with oil, salt, and garlic and (2) fry eggs and layer them with chard, kale, and/or arugula. Tomato if I have it! And often sprinkle with cheese.

    In winter I tend towards quickbreads, pancakes, baked winter squash, baked sweet potatoes, baked apples, and frozen or canned soups.
